Evening Calm Bedtime Mocktail (Alcohol-Free)

Alcohol and sleep don't mix—it disrupts REM cycles, fragments sleep, and contradicts the entire point of a sleep blend. So this entry is firmly mocktail-only: the cocktail-glass format and elegant build give you the ritual of an evening drink without anything that would undermine your rest.
The honey-lavender syrup is the centerpiece. Simmering honey with dried culinary lavender extracts the lavender's calming linalool into a smooth, pourable sweetener that doesn't need shaking to incorporate (raw honey doesn't dissolve well in cold drinks).
Brew the sleep blend strong (double the usual amount) and chill it fully before mixing. The strength matters here because soda water and lemon juice will dilute it—you want the chamomile and lemon balm character to remain front and center.
Serve in a chilled coupe with a sprig of fresh lemon balm or a few dried lavender buds floating on top. The presentation matters: the visual ceremony of a 'real' cocktail glass is half of what makes a wind-down ritual stick.
Ingredients
- 90 ml strong cold sleep blend tea (chamomile + lemon balm + lavender)
- 20 ml fresh lemon juice
- 15 ml honey-lavender syrup (see step 1)
- 30 ml sparkling water
- 1 tbsp honey + 1 tbsp water + 1/4 tsp dried culinary lavender (for syrup)
- Lemon twist for garnish
- Fresh lemon balm sprig or 3 dried lavender buds for garnish
- Ice cubes for shaking
How to make it
- 1Make the honey-lavender syrup: in a small saucepan, warm honey, water, and dried lavender over very low heat for 3 minutes. Remove from heat, steep 10 minutes, then strain. Cool fully.
- 2Add cold sleep blend tea, lemon juice, and 15 ml honey-lavender syrup to a cocktail shaker with ice. Shake gently for 8 seconds (don't over-aerate).
- 3Double-strain into a chilled coupe glass.
- 4Top with a splash of sparkling water and stir once.
- 5Garnish with a lemon twist and a sprig of fresh lemon balm or a few dried lavender buds.
