Iced Rose Strawberry Lemonade

Cold-brewed rose petals blended with muddled strawberries, fresh lemon, and a touch of honey—a fragrant, blush-pink lemonade that tastes like a summer garden.

Cold-brewing rose petals is the secret to capturing their full fragrance. Hot water extracts the flavor quickly but burns off the most delicate top notes; an overnight cold steep gives you a pale, perfumed water that smells like a Persian rose garden in May.

Strawberries and rose share natural aromatic compounds—the same molecules that give a ripe strawberry its scent appear in rose petals. Muddling fresh strawberries into the lemonade base creates a flavor pairing so seamless it feels predestined.

Lemon is the brightening element that keeps this drink from feeling cloying. The acidity cuts through the floral sweetness and turns the strawberry-rose combination into something genuinely refreshing rather than dessert-like. Don't skip it, and use fresh lemons only.

Make a full pitcher and keep it in the fridge for hot afternoons. Serve over plenty of ice with a fresh strawberry, a small dried rose bud, and a lemon wheel in each glass—it's the iced drink to serve at a summer wedding shower or a long brunch with friends.

Ingredients

  • 1/4 cup dried rose petals (food-grade)
  • 4 cups cold water
  • 8 fresh strawberries, hulled and halved
  • Juice of 2 large lemons
  • 3 tbsp raw honey dissolved in 2 tbsp warm water
  • Lemon wheels and fresh strawberries for garnish
  • Small dried rose buds or fresh petals for garnish
  • Ice cubes

How to make it

  1. 1Cold-brew: place dried rose petals in cold water and refrigerate 10–12 hours. Strain through a fine sieve.
  2. 2In a pitcher, muddle the halved strawberries with the honey syrup until juicy and broken down.
  3. 3Add the rose-infused water and fresh lemon juice. Stir well and taste—adjust honey if needed.
  4. 4Fill tall glasses with ice. Pour the rose lemonade over.
  5. 5Garnish each glass with a lemon wheel, a fresh strawberry, and a small dried rose bud or fresh petal.
