Lu'an Gua Pian Gin Fizz

A bright, herbaceous gin fizz built on Lu'an Gua Pian-infused gin with lemon and soda—plus a zero-proof mocktail version for everyone at the table.

Lu'an Gua Pian's clean, toasty green character is a natural foil for gin's botanicals. A short infusion gives the spirit a soft vegetal sweetness and a whisper of chestnut, turning an ordinary gin fizz into something fresh and quietly sophisticated.

Keep the infusion brief—about 90 minutes—so the gin picks up the tea's bright top notes without any bitterness. Strain it well and the spirit takes on a pale golden tint and a gentle green-tea aroma.

Lemon juice and a little simple syrup balance the drink, while a generous top of soda water keeps it light and effervescent. A sprig of mint or a twist of lemon finishes it cleanly.

For a non-alcoholic mocktail, skip the gin entirely: shake 90 ml of strong, chilled Lu'an Gua Pian tea with the lemon juice and simple syrup over ice, then top with soda water. You get the same crisp, herbaceous fizz—refreshing and celebratory without any alcohol.

Ingredients

  • 60 ml Lu'an Gua Pian-infused gin (see step 1)
  • 25 ml fresh lemon juice
  • 15 ml simple syrup
  • Soda water, to top
  • Mint sprig and lemon twist for garnish
  • Ice cubes

How to make it

  1. 1Infuse the gin: add 1 tbsp Lu'an Gua Pian leaves to 200 ml gin in a sealed jar for 90 minutes, then strain out the leaves.
  2. 2Add the infused gin, lemon juice, and simple syrup to a shaker filled with ice. Shake well until chilled.
  3. 3Strain into a tall glass over fresh ice.
  4. 4Top with soda water and stir gently once.
  5. 5Garnish with a mint sprig and a lemon twist, and serve immediately.
