Darjeeling White Tea with Honey and Rose

Darjeeling White is naturally low in caffeine and rich in the antioxidants that minimally processed teas retain, which makes it a lovely base for a gentle wellness ritual. This version keeps the cup quiet and floral, adding only a hint of honey and a few rose petals to lift the tea's natural fragrance.

The single most important thing is water temperature. White tea scorches easily, so let your kettle cool to around 80°C before pouring. Brewing too hot pulls out bitterness and flattens the delicate muscatel and floral notes you want to preserve.

Rose and white tea are a classic pairing because their aromatics live in the same gentle register. A small pinch of dried food-grade rose petals echoes the tea's floral side without overpowering it, while a teaspoon of honey rounds everything into a soft, soothing cup.

Sip this slowly in the late afternoon or early evening, when you want warmth and calm without the stimulation of a stronger tea. Ingredients

  • 1 tbsp Darjeeling White tea leaves
  • 1 cup water heated to about 80°C
  • 1 tsp dried food-grade rose petals
  • 1 tsp honey
  • 1 thin slice of lemon (optional)

How to make it

  3. 3Pour over water cooled to about 80°C and steep gently for 3–4 minutes.
