Ingredients
- 1 cup strongly cold-brewed Gong Mei tea (3 tbsp leaves steeped 8 hours in 1.5 cups cold water)
- 1/4 cup fresh peach purée (1 ripe peach, blended)
- 2 tbsp fresh lemon juice
- 1 tbsp honey syrup (equal parts honey and warm water, cooled)
- 1 cup chilled sparkling water
- Ice cubes
- Peach slices and mint sprig for garnish
How to make it
- 1Cold-brew the Gong Mei tea overnight, then strain and chill thoroughly.
- 2In a shaker or jar, combine the cold-brewed tea, peach purée, lemon juice, and honey syrup. Shake or stir well.
- 3Fill two glasses with ice and divide the tea mixture between them.
