Iced Rooibos Chai with Vanilla and Oat Milk

Iced rooibos chai is the cooling, caffeine-free answer to an iced chai latte. Cold-brewing or chilling a strong rooibos chai concentrate keeps the spices smooth and the rooibos sweetness intact, giving a refreshing spiced drink you can enjoy on a warm afternoon or evening.

Vanilla is the perfect partner here. A little vanilla rounds the cinnamon, cardamom, and clove and amplifies the rooibos's natural honeyed character, making the whole drink taste like a creamy, spiced dessert over ice.

Creamy oat milk gives the iced version its luscious texture and a touch more sweetness without dairy. Pour the spiced rooibos concentrate over ice, top with cold oat milk, and watch it swirl into a beautiful marbled latte.

Because it's caffeine-free, this is the iced drink you can have late in the day without a second thought. Sweeten with a little maple syrup if you like, and add an extra dusting of cinnamon on top for that café-style finish.

Ingredients

  • 3 rooibos chai tea bags (or 3 tbsp loose blend)
  • 1 cup water
  • 1/2 tsp vanilla extract
  • 1 cup oat milk
  • 1 tbsp maple syrup (optional)
  • Plenty of ice
  • Ground cinnamon, to dust

How to make it

  1. 1Brew a strong concentrate: boil the water, add the rooibos chai, and steep 8 minutes, then strain and let cool.
  2. 2Stir the vanilla and maple syrup (if using) into the cooled concentrate.
  3. 3Fill two glasses with ice and divide the spiced rooibos concentrate between them.
  4. 4Top each with cold oat milk, stir gently, and dust with ground cinnamon.
