Brew the lemongrass long enough to draw out its full lemon aroma, but keep the ginger balanced so it warms rather than overwhelms. A little honey and a squeeze of lemon round everything out into a clean, bright cup.

Ingredients

  • 2 tbsp dried lemongrass (or 2 lemongrass tea bags)
  • 1-inch piece fresh ginger, sliced thin
  • 2 cups hot water (just off the boil)
  • 1 tbsp honey
  • Juice of half a lemon
  • 1 cinnamon stick (optional)

How to make it

  1. 1Place the lemongrass and ginger slices in a teapot or heatproof jug.
  2. 2Pour over the hot water and add the cinnamon stick if using. Cover and steep 6–8 minutes.
  3. 3Strain into cups, discarding the lemongrass and ginger.
  4. 4Stir in honey and lemon juice to taste, then serve warm.
