
Ginger Tea Dark 'n' Stormy

The Dark 'n' Stormy is already built around ginger, so swapping ginger beer for a homemade ginger tea syrup takes this cocktail from great to transcendent. The tea adds complexity and herbal depth that bottled ginger beer simply can't match.
Dark rum is the only choice here—its molasses richness and caramel notes play off the ginger's spice like old friends. Aged rum works even better if you have it, adding vanilla and oak undertones.
The ginger tea syrup is the secret weapon. Brew the tea ridiculously strong, then reduce it with sugar into a thick, fiery syrup. Make a batch and keep it in the fridge—it lasts two weeks and transforms any drink it touches.
For a mocktail version, skip the rum and build the drink with ginger tea syrup, fresh lime, and sparkling water over ice. All the storm, none of the dark—still absolutely delicious.
Ingredients
- 60 ml dark rum
- 30 ml ginger tea syrup (see steps)
- 15 ml fresh lime juice
- Sparkling water
- Ice cubes
- Lime wheel for garnish
- For syrup: 1 cup strong ginger tea + 1/2 cup sugar
How to make it
- 1Make ginger tea syrup: brew 1 cup of very strong ginger tea (3 bags or big knob of fresh ginger). Stir in 1/2 cup sugar over low heat until dissolved. Cool completely.
- 2Fill a tall glass with ice cubes.
- 3Pour ginger tea syrup and lime juice over the ice. Stir gently.
- 4Slowly pour dark rum over the back of a spoon so it floats on top.
- 5Top with a splash of sparkling water. Garnish with a lime wheel.
- 6Stir just before drinking to combine the layers, or enjoy the gradual blending sip by sip.
