Lavender Gin Fizz

A sophisticated gin fizz with lavender-infused syrup, fresh lemon, and fizzy soda—fragrant, balanced, and irresistibly purple.

Gin and lavender are a legendary pairing—gin's juniper botanicals already live in the same aromatic family, so adding lavender feels like amplifying what's already there rather than introducing something foreign.

The lavender simple syrup is the secret weapon here. Simmering dried lavender buds in sugar water creates a beautifully fragrant, purple-tinged syrup that keeps in the fridge for two weeks and elevates any drink it touches.

A generous squeeze of fresh lemon is essential to keep the cocktail from becoming cloyingly floral. The citrus cuts through the perfume and adds a bright, clean backbone that makes the lavender sing rather than shout.

For a mocktail version, swap the gin for a quality non-alcoholic botanical spirit or simply use extra soda water with a splash of tonic. The lavender syrup and lemon do most of the heavy lifting, so you won't miss the alcohol.

Ingredients

  • 60 ml gin
  • 25 ml lavender simple syrup (see step 1)
  • 25 ml fresh lemon juice
  • Soda water
  • 2 tbsp dried culinary lavender (for syrup)
  • 1/2 cup sugar + 1/2 cup water (for syrup)
  • Ice cubes
  • Fresh lavender sprig for garnish

How to make it

  1. 1Make lavender syrup: simmer sugar, water, and dried lavender in a saucepan for 5 minutes. Cool completely and strain. (Makes enough for several cocktails.)
  2. 2Add gin, lavender syrup, and lemon juice to a cocktail shaker filled with ice.
  3. 3Shake vigorously for 10 seconds until well chilled.
  4. 4Strain into a tall glass filled with fresh ice.
  5. 5Top with soda water and gently stir once. Garnish with a fresh lavender sprig.
