Honey and smoke have always belonged together. Raw honey rounds the tea's smoky edge and brings its own antimicrobial benefits—stirred in after the brew cools slightly, so the enzymes survive. Lemon adds brightness and a vitamin-C lift that the body recognizes as soothing for the throat.

Ingredients
- 1 Russian Caravan tea bag (or 2 tsp loose)
- 1 cup hot water (95°C)
- 1 small sprig fresh thyme
- 1 tbsp raw honey
- Juice of half a lemon
- 1 thin lemon slice for garnish
- Pinch of sea salt (optional)
How to make it
- 1Lightly bruise the thyme sprig in your palm to release its oils. Place tea and thyme in a mug.
- 2Pour hot water over and steep 3.5 minutes. Remove tea bag (leave thyme in).
- 3Let the tea cool for 2 minutes off the heat.
- 4Stir in honey until dissolved, then add the lemon juice and a tiny pinch of salt if using.
- 5Garnish with a lemon slice. Sip slowly while warm.
