Rosemary Focus Tonic with Lemon and Honey

The lemon does more than add flavor: its acidity lifts rosemary's resinous, forest-like aroma, making the whole cup feel brighter and more wakeful rather than heavy or medicinal.

Brew this one on the stronger side — 5 to 6 minutes — since rosemary's flavor compounds extract slowly. Unlike more delicate herbs, rosemary can handle a longer steep without turning unpleasantly bitter.

Ingredients

  • 1 rosemary tea bag or 1 tbsp dried rosemary
  • 1 cup hot water (95°C)
  • 1 tbsp honey
  • Juice of half a lemon
  • 1 thin lemon slice for garnish
  • Small fresh rosemary sprig (optional, for aroma)

How to make it

  1. 1Place the rosemary tea in a cup or infuser. Pour the hot water over it.
  2. 2Steep for 5 to 6 minutes, then remove the tea bag or strain out the leaves.
  3. 3Let cool for 1 minute, then stir in the honey and lemon juice until dissolved.
  4. 4Garnish with a lemon slice and a small rosemary sprig, if using. Serve warm.
