Iced Rooibos Vanilla Latte

A creamy, caffeine-free iced latte made with cold-brewed rooibos, vanilla, and oat milk—sweet, smooth, and impossibly refreshing.

Rooibos cold-brews into something magical—all the natural sweetness and nutty warmth come through with zero bitterness or astringency. It's the perfect caffeine-free base for an iced latte that rivals any coffee shop creation.

Oat milk is the ideal partner here. Its creamy, slightly sweet character amplifies the rooibos' vanilla notes and creates that latte-like body you crave on a hot afternoon.

A touch of vanilla extract and a drizzle of maple syrup elevate the drink from simple iced tea to a genuinely indulgent treat. Shake it hard with ice to get that beautiful frothy top layer.

Make a big batch of the rooibos cold brew on Sunday night and you'll have iced lattes all week. It keeps beautifully in the fridge for up to five days—just add milk and ice when ready.

Ingredients

  • 3 rooibos tea bags or 3 tbsp loose leaf
  • 2 cups cold water
  • 1/2 tsp vanilla extract
  • 1 tbsp maple syrup
  • 1 cup oat milk (or milk of choice)
  • Ice cubes

How to make it

  1. 1Cold-brew: place rooibos in cold water and refrigerate 8–12 hours. Strain.
  2. 2Stir vanilla extract and maple syrup into the cold brew.
  3. 3Fill 2 tall glasses with ice. Pour rooibos cold brew to fill each glass halfway.
  4. 4Pour oat milk over the back of a spoon to create a layered effect, or just pour and stir.
