Anji Bai Cha Vodka Spritz

Ingredients
- 60 ml Anji Bai Cha-infused vodka (see step 1)
- 20 ml elderflower cordial
- 15 ml fresh lemon juice
- Chilled sparkling water, to top
- Lemon twist and mint sprig for garnish
- Ice cubes
How to make it
- 1Infuse the vodka: add 1 tbsp Anji Bai Cha leaves to 200 ml vodka in a sealed jar for 60–90 minutes, then strain out the leaves.
- 2Fill a wine glass with ice. Add the infused vodka, elderflower cordial, and lemon juice.
- 3Stir gently to combine and chill.
- 4Top with chilled sparkling water and give one light stir.
- 5Garnish with a lemon twist and a mint sprig, and serve immediately.
