A splash of soda water at the end keeps the drink light and effervescent rather than heavy, and a few thin peach slices floated on top reinforce the fruit aroma with every sip. Build it directly in the glass over ice for the easiest version.

How to make it
- 1Cold-brew the peach green tea strong (double the usual leaf, steeped 8–12 hours in cold water) and chill thoroughly.

- 3Pour in the cold-brewed tea, then top with prosecco (or sparkling grape juice for the mocktail version).
- 4Add a splash of soda water and stir gently once to combine.
