Strawberry Green Tea Bubble Tea (Boba)

Cold-shaken strawberry green tea with milk foam and chewy tapioca pearls — a homemade version of the bubble-tea-shop classic.

This is the drink that made strawberry green tea famous: a cold, shaken bubble tea with chewy tapioca pearls at the bottom and a layer of light milk foam on top. It's easy to recreate at home and lets you control the sweetness exactly how you like it.

Cold-brewing or strong hot-brewing and then chilling the tea is key — a weak brew gets lost once it's shaken with ice and milk. Brewing the leaf a little stronger than usual for hot drinking ensures the strawberry and green tea flavor still comes through after dilution.

Tapioca pearls need to be cooked fresh and used the same day for the best chewy texture; they firm up and lose their bounce if stored too long. If you don't have boba pearls on hand, popping fruit pearls or diced fresh strawberry make a fun, easy substitute.

Shaking the tea with ice in a cocktail shaker (or a jar with a tight lid) before pouring gives it the characteristic frothy top you see in cafes. Layer it over the pearls in a clear glass for the full bubble-tea-shop look.

Ingredients

  • 2 strawberry green tea bags or 2 tbsp loose leaf
  • 1 cup hot water (85°C)
  • 1/4 cup brown sugar or simple syrup
  • 1/2 cup milk or oat milk
  • 1/2 cup cooked tapioca pearls (boba)
  • Ice cubes
  • Fresh strawberry slices, for garnish

How to make it

  1. 1Steep the tea bags in hot water for 5 minutes for a strong brew, then remove and stir in brown sugar or simple syrup while warm. Let cool, then chill in the fridge.
  2. 2Spoon the cooked tapioca pearls into the bottom of a tall glass.
  3. 3Fill the glass with ice on top of the pearls.
  4. 4In a shaker or jar, combine the chilled strawberry green tea with milk and a handful of ice. Shake vigorously for 10–15 seconds.
  5. 5Pour the shaken tea over the ice and pearls, leaving the foam on top. Garnish with fresh strawberry slices and serve with a wide bubble-tea straw.
