Sencha Gin Fizz

A botanical gin fizz elevated with sencha-infused gin, fresh lime, and sparkling water—herbaceous, bright, and effortlessly cool.

Sencha and gin are natural allies—both are botanical, herbaceous, and a little bit grassy. Infusing gin with sencha deepens its green character and adds an umami backbone that makes this fizz dangerously drinkable.

The infusion is quick: just 30 minutes at room temperature. Any longer and the tea turns the gin bitter and tannic. You want a light jade tint and a subtle grassy aroma, not a murky brew.

Fresh lime juice and a touch of simple syrup balance the botanical intensity. The sparkling water on top lifts everything into fizzy, refreshing territory—perfect for warm evenings.

For a zero-proof version, cold-brew sencha overnight, then build the drink with lime, syrup, and sparkling water over ice. You get the same herbaceous complexity without the alcohol.

Ingredients

  • 60 ml gin
  • 1 sencha tea bag or 1 tbsp loose leaf
  • 30 ml fresh lime juice
  • 15 ml simple syrup
  • Sparkling water
  • Ice cubes
  • Lime wheel and mint sprig for garnish

How to make it

  1. 1Infuse gin: add sencha tea bag or loose leaf to gin in a sealed jar for 30 minutes. Strain and discard tea.
  2. 2Add sencha-infused gin, lime juice, and simple syrup to a cocktail shaker with ice.
  3. 3Shake vigorously for 10 seconds.
  4. 4Strain into a highball glass filled with fresh ice.
  5. 5Top with sparkling water and stir gently once.
