Lavender-Honey Glazed Chicken with Roasted Vegetables

Ingredients

  • 6 bone-in chicken thighs
  • 3 tbsp honey
  • 1 tbsp dried culinary lavender
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 3 carrots, cut into chunks
  • 2 parsnips, cut into chunks
  • 1 large sweet potato, cubed
  • Salt and pepper
  • Fresh thyme sprigs

How to make it

  1. 1Preheat oven to 200°C (400°F). Warm honey in a small saucepan, add lavender, and let steep 10 minutes off heat. Strain out lavender buds.
  2. 2Whisk lavender honey with olive oil, garlic, lemon juice, salt, and pepper to make the glaze.
  3. 3Toss vegetables in half the glaze and spread on a large baking sheet. Season with salt and pepper.
  4. 4Place chicken thighs skin-side up on top of the vegetables. Brush generously with the remaining glaze.
