Hojicha was invented in 1920s Kyoto when a tea merchant roasted leftover bancha leaves and stems to refresh them; its low caffeine comes mostly from those mature leaves and stems (the roast reduces it only slightly), which is why Japan serves it to children and the elderly in the evening.
