San Diego spreads its leaf across four neighbourhoods and four completely different ways of buying it: by the gram in Ocean Beach, by the ounce in Liberty Station, in 40 g pouches in Kearny Mesa and in 56 g halves in La Jolla. The entry price runs from $8 for a 10 g gongfu session to $45 for a tin of stone-milled matcha, and three of the four shops source their single origins directly.

Founded in 2017 after its owners' trips through Japan, it buys single-origin lots direct from farmers in Japan, Thailand, Vietnam and China and stone-mills its matcha in house on a Kyoto mill. Earl Grey Lavender, Misty Shou and Coconut Chai are $18, Mainichi everyday sencha $24 the 85 g, the Dong Ding 12 reserve $24 the 56 g and a 30 g tin of 10K ceremonial matcha $45. A Sunday farmers' market on the street makes parking harder.

Everything is sold in 1, 2, 4 and 8 oz, so it is the easiest place in the city to buy a single ounce of a classic and move on: Earl Grey Grand, English Breakfast and Rooibos Roasted are $10 the ounce, Chamomile Blossom $11, Ti Kuan Yin $14 and Dragonwell $16. The catalogue runs to some 360 teas plus a large teaware section, and there is a tearoom for tastings.

It is also the only one open until 10pm.

Everything is sold by the gram from 10 g up, so a single gongfu session of something rare costs what a cup costs elsewhere: Genmaicha is $8 the 10 g; Dragon Well, the Honey Orchid dan cong and White Peony $12.50; Golden Eyebrow and the Gold Sun shou puer $15. It also sells handmade teaware and runs side-by-side tasting ceremonies. No hours are published, so phone ahead.
